I realized that I do a lot of dessert recipes (curse of being a sweet-tooth)… so today I present to you a recipe for some real food. HAHA. Chicken breasts are a healthy protein option for our bodies (I love this for post-workout). Asparagus is probably my favorite veggie with broccoli coming in a close second. So with a side of asparagus to the lemon chicken, this is the perfect lunch/dinner meal. You can also add a side of brown rice as long as you stay within your macros.

Lemon Chicken Breasts With Asparagus

  1. 1 lb chicken breast
  2. 2 tbsp butter
  3. 1/4 cup whole wheat flour
  4. 1/2 tsp salt
  5. 1 tsp lemon pepper
  6. 1 cup chopped asparagus
  7. 2 lemons, sliced
  1. Cover chicken breasts with plastic wrap and pound until each pieces are about 3/4 of an inch thick.
  2. Place flour and salt in a shallow dish and gently coat each chicken breast.
  3. Melt butter in a large skillet over medium high heat.
  4. Add chicken and saute for 3 - 5 minutes on each side, until golden brown.
  5. Sprinkle each side with lemon pepper directly in the pan.
  6. When chicken is cooked through, transfer to a plate.
  7. Add lemon slices and chopped asparagus to the pan.
  8. Make sure lemon slices are on the bottom so they caramelize and pick up the browned bits left from the chicken and butter.
  9. When the asparagus is done and the lemons are golden brown, add chicken back to the pan to mix.
